Hamburger Slaw

Hamburger slaw is an old favorite that my mom makes sometimes and everyone always loves it. This dish is really great if you need something quick and easy but also hearty an comforting. Serve it with a side salad and some rolls.


Hamburger Slaw

1 pckg lean ground beef
1 yellow onion
1 bag of egg noodles
3 tablespoons sour cream
2 tsp worcestershire sauce
S/P

Sautee the ground beef and chopped onion in a pan until everything is nice and brown. At this point you want to add the salt and pepper and about 2 tsp of worcestershire sauce. Continue to cook for another 5 minutes. drain your noodles and put off to the side. Add sour cream last, then stir in the egg noodles and serve. Enjoy

Pork Carnitas

For the Pork Carnitas- Set the oven to 350 degrees and heat up four tablespoons of vegetable oil in a frying pan, or your dutch oven (make sure the oil is nice and hot and pat the meat dry with a paper towel, otherwise it won't brown properly). After the meat is browned evenly on both sides, set aside and let rest for 10 minutes. Then cut the pork into strips and an put into the dutch oven, or a high sided baking dish with a lid. Then add the onion, the rotel and the canned green chillies. Then add the chicken stock, and your spices. Mix everything together, cover and put into the oven for at least two hours (the longer the better).  Remove from the oven and mix in some fresh green onion and can of black beans. Heat your flour tortillas by wrapping them in a damp paper towel and put them in the microwave for 1 min. To serve, spread sour cream on the bottom of the tortilla, then add your cheese (Monterrey jack, or queso fresco works nicely), then the pork and pico de gallo. To top it all off add some sliced, ripe avocado. Roll them up and serve with my spanish rice and a pomegranate margarita.

Pico de Gallo- Combine chopped tomatoes, red onion and jalepeno in a bowl with juice of one lime. The add a few sprigs of fresh cilantro and a dash of chili powder. Salt and pepper to taste.

Ingrediants:

1 can of Rotel
1 can black beans
1 can diced green chillies
1 spanish onion chopped
1 red onion
2 green onions
1/2 tsp. cumin
1 tsp. chili powder
1/2 tsp. cayenne pepper
sour cream
grated monterey jack cheese
flour tortillas
1 ripe avocado
3 ripe tomatoes
fresh cilantro
2 limes

Kendall's Famous Guacamole

 This is a really nice alternative if your not into the creamier dips such as onion or veggie. Serve this with tortilla chips and a smile.

4 Haas Avocados (preferably ripe; to make sure your avocados are nice and ripe by game day, place in a brown paper bag overnight)
1 yellow onion
1 fresh jalapeno pepper
1 lime
1 ripe tomato
1tsp. chili powder

Chop all of your veggies and put in a dish to the side. The cut your avocados open and remove the pit. mash the avocado with a fork until nice and creamy. ten add the chopped veggies and chili powder making sure to use the entire lime. Mix and serve with carrots and tortilla chips.

Super Bowl Sunday

Here are just a few items that I like to make when I am cooking for a bunch of people. Tangy, veggie dips and smaller nibbles such as hot wings, mini meatballs or sliders are perfect for people to eat while socializing at the same time.

Kendall's Sweet and Spicy Chicken Wings

1 bag of frozen chicken wings
1 bottle of Franks Red Hot Buffalo Sauce
1 tsp. brown sugar
2 tbsp. honey
1 tsp. cayenne powder
1 tbsp. red pepper flakes
1 tbsp. vegetable oil
salt and pepper

Set oven to 325 degrees. Mix all of the ingredients in a large bowl and set  aside some of the sauce for applying at the end. Then add the chicken wings making sure to cover all of the wings are coated evenly. Then place the wings on a baking sheet and cover with tin foil, bake for  two hours, checking on them every so often. After the two hours is up, set the oven to 365 degrees, take the foil off and apply the remainder of the sauce onto the wings and bake for 30 more minutes. When they are finished they will be juicy and tender on the inside and crispy on the outside. Absolutely delicious. Serve them right away with celery and ranch or blue cheese whichever you prefer.  Enjoy : )

Pizza in a Pinch

I was in my kitchen the other night...it was late and my cabinets were bare but I was starving. I didn't want to make something over the top but just enough to sufice my appetite. So I found a little can of tomatoe paste, a couple slices of bread and some leftover grated cheese. Now, I know it doesn't sound like much but it was delicious. Just assemble the bread on a baking sheet or some tin foil and spread a little paste on each slice. Then top with the shredded cheese and/or any other toppings you might want to add. Bake at 355 for 10 minutes and voila, Pizza in a pinch.


Just a thought: English muffins would work nicely too.
